Salute to Paul Johnson

Our Celebrated Winemaker Series continues this July on the 25th a salute to Paul Johnson and Smokescreen wines. Enjoy a special four-course dinner by Chef Jamie Gallimore, paired with the award-winning wines from Smokescreen.

Bluewater Grill Phoenix continues its Celebrated Winemaker Series with a July 25th culinary tribute to European-turned-Napa Valley-winemaker Paul Johnson, co-founder of Smokescreen Wines in St. Helena, California.

Bluewater Executive Chef Jamie Gallimore has teamed with Johnson to create a special four-course tasting menu pairing Bluewater’s famous sustainable seafood and shellfish with the winery’s award-winning Chardonnay, Pinot Noir and red blends.

The exclusive “Bluewater Salutes Paul Johnson” menu, available on July 25 only, includes Smoked Tuna Carpaccio; Halibut with Caramelized Onion Tart served with Pancetta, Brown Butter Brussels Sprouts and Baby Root Vegetables; Wild Salmon “En Papillote” with Purple Potatoes, Fennel Purèe, Meyer Lemon and Melted Leeks; and Hazelnut Scented Fruit Tart and Dark Chocolate Mint Digestif.

The three Smokescreen wines paired during the evening include a 2014 Chardonnay, 2015 Pinot Noir, and 2012 “The Chemist” Red Blend.

The July 25 event comes after popular Bluewater Phoenix Celebrated Winemaker evenings honoring Carmel Road Winery and Drew Barrymore Wines in May, and Phoenix’s own Pillsbury Wines in June.

“We’re thrilled to continue our Celebrated Winemaker Series and introduce our customers to the everyday elegance of Smokescreen Wines for the first time,” explained Gallimore. “Bluewater worked closely with Paul to create a menu that blends his European winemaking roots and the new culinary style of Napa Valley with the absolute freshest sustainable seafood in the West.”

When Paul and Marion Johnson visited the Napa Valley in 1998, they talked about Paul's lifelong dream of making wine. In 2003 that dream became a reality. Paul has lived and worked half of his life in Europe and Marion was born and raised in the Rheingau region of Germany where wine is part of the culture. The European lifestyle of food and wine brought them to the Napa Valley to pursue their passion. Together with friend and winemaker Gary Galleron, they started Fiftyrow in 2003 and released their first wine in 2005.

When they started, the goal was to make wines that blend new world style with a little European style thrown in. Today, the work continues to improve the wines with every vintage of Fiftyrow and the “everyday” wines under the Smokescreen label.
