Bluewater Grill Carlsbad has opened in the heart of Carlsbad Village as the newest destination for North County residents wanting the absolute freshest sustainable seafood and shellfish in California.

The spectacular new restaurant – in a redesigned and expanded space previously occupied by Fish House Vera Cruz – joins six other neighborhood Bluewaters including Bluewater Boathouse Seafood Grill in the historic former Hotel del Coronado boathouse on Coronado Island.

In the Bluewater tradition, Bluewater Grill Carlsbad showcases the culinary possibilities of the freshest sustainably caught or farm-harvested seafood, in an atmosphere of casual style and at surprisingly affordable prices. Executive Chef Art Garcia is combining his years of local North County culinary knowledge and gourmet seafood experience to create continually updated lunch and dinner menus featuring up to 40 varieties of fresh fish annually.

Bluewater co-owners Jimmy Ulcickas and Richard Staunton have worked closely with the City of Carlsbad to create the perfect contemporary fish house destination featuring a reimagined dining room, two new outdoor dining patios, a new bar and lounge area and full-service fresh market and retail counter offering locally caught seafood and local wines.

Since the first Bluewater Grill opened in Newport Beach’s Cannery Village in 1996, Bluewater has developed a reputation for not only serving the freshest seafood but also leading the industry in sustainable fishing and farming practices.

To date, more than 90% of the choices on Bluewater’s lunch and dinner menus are sustainably caught or farmed – among the highest of any restaurant in California. Bluewater founders also operate the fishing vessel, Pilikia, to provide customers with the freshest, sustainably-caught seafood. Fishing off the coast of Southern California, Captain Sean Burke harpoons only mature fish without the use of nets or long lines.

Giorgio Tegami, a long-time Carlsbad resident, is Bluewater Grill Carlsbad’s GM and managing partner. “It’s a thrill to introduce Bluewater’s legacy of the freshest sustainable seafood – from small plates and simply prepared fish dishes to the most elaborate chef creations – to my Carlsbad neighbors. Given Carlsbad’s role as a sophisticated resort and vacation town, we know that locals and visitors will be hooked.”

Bluewater Grill, located at 417 Carlsbad Village Drive, is open for lunch and dinner daily. Hours are 11am to 9pm Monday through Thursday, 11am to 9:30pm Friday, 10:30am to 10pm Saturday and 10:30am to 9pm Sunday.
