Bluewater Salutes its Signature Swordfish During Monthly August Tasting

Chipotle Blackened Swordfish with Roasted Corn and Avocado Relish is the star of Aug. 13 tasting and menu celebration

NEWPORT BEACH, Calif.  (May 20, 2019) – One of the most-ordered dishes on the menu at Bluewater restaurants in California and Arizona is the star of a month-long celebration in August.

Bluewater’s legendary Chipotle Blackened Swordfish with Roasted Corn and Avocado Relish featuring harpooned swordfish caught in local waters by the restaurants’ own private fishing boat, Pilikia – is the focus of the Swordfish Salute month-long celebration and kick-off tasting event at all eight Bluewater Grill and Bluewater Boathouse Seafood Grill restaurants on Aug. 13.

The two newest Bluewater Grills – in the heart of Carlsbad Village and on the beachfront in Santa Barbara overlooking Stearns Wharf – will participate.  Meanwhile, Bluewater Avalon on Catalina Island will offer its Island version of the classic: Chipotle Blackened Swordfish with Roasted Pineapple Salsa.

According to Bluewater Executive Chef Jason Mazur, the restaurant’s Chipotle Blackened Swordfish was introduced in 2015 and quickly turned into one of the most popular items on the menu. Fresh sustainable swordfish harvested locally by Bluewater’s own fishing boat is chipotle-blackened and served with chipotle dirty rice, sweet corn and avocado relish.

“Very rarely as a chef, you strike lightening in a bottle with something that everyone absolutely loves,” said Mazur. “The dish’s popularity has allowed us to spotlight harpooning as the most humane and sustainable method of harvest that supports Bluewater’s long-time commitment to sustainable seafood.”

The special Aug. 13 meal pairs Chipotle Blackened Swordfish with Roasted Corn and Avocado Relish with several hand-selected white wines for $40, a $20 savings off the regular price. Fresh seafood fans can order the specially prepared entrée off all eight Bluewater menus throughout the remainder of the month (and indefinitely) and pair it with wines on each restaurant’s wine list for the per-pour cost. 

Consistent with Bluewater Grill’s strict commitment to seafood sustainability, Bluewater’s Pacific Swordfish complies with sustainability standards established by the Monterey Bay Aquarium, Aquarium of the Pacific in Long Beach and other third-party organizations dedicated to fish-origin certification.
